These were called Mexican Wedding Cakes in my family. I have since had the same cookies, but called Russian Wedding Cakes, or shapped differently and called Crescent Cookies. They're so popular everyone claims them as their own.
MEXICAN WEDDING CAKES
1 cup soft butter
1 cup powdered sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 cups unbleached white flour
1 cup chopped Brazil nuts (or pecans)
Powdered sugar
Combine butter, sugar, salt and vanilla. Cream until light and
fluffy. Mix in flour and nuts. Form into just under 1-inch balls
and flatten slightly onto ungreased baking sheet.
Bake at 400 degrees for 8 to 10 minutes, or until creamy tan in
color. Roll in powdered sugar while still warm.
Makes about 5 dozen rich crisp cookies. Bed and Breakfast Inns |
