Get out the checkered tablecloth, some wine, and invite a special friend or two to a picnic. The following recipe presents well and is very tasty!
PICNIC PASTA
1/2 lb. pasta shells, cooked & drained
1 cup turkey ham (or reg. ham), cut in strips
One 11-oz. can mandarin oranges
3 green onions, chopped
1/2 green pepper, sliced thinly
1/2 red pepper, sliced thinly
1/4 cup sliced black olives
1/4 cup crumbled feta cheese
1/4 cup toasted walnut pieces
Dressing:
3 Tbsp B&B Liqueur (how appropriate!)
3/4 cup mayonnaise
2 Tbsp fresh pesto
1/2 tsp salt
1/2 tsp tarragon
1/2 tsp fresh ground white pepper
Mix dressing in a bowl with wire whip. Pour over pasta and marinate overnight.
Mix in other ingredients just before serving. Mound on chilled plate with greens at home, or pack in a picnic container and put salad greens in separate container or plastic bag and assemble on site.
Colorful and very tasty. Crusty French bread and cold chilled Chardonnay - great accompaniments.
